Winter is coming, and so are the extra kilos! It’s hard to be mad when they’re caused by a delicious recipes such as Dennis Pavia’s Oreo cheesecake!

Dennis is the drummer for American metal band Diecast along with Ashes of Eden and Tantrumn previously. He volunteered to fill in on drums for Diecast in 2006 and he was such a great fit for the role, he was asked to stay as a permanent full time member.

– One 18-ounce package Oreo cookies
– 1/4 cup melted butter or margarine
– Four 8-ounce packages cream cheese, softened
– 1 cup sugar
– 1 teaspoon vanilla extract
– 3/4 cup sour cream
– 4 large eggs
Preheat oven to 325F (162C).
Place 30 of the cookies in a plastic zipper bag. Flatten the bag to remove excess air, then seal. Finely crush cookies by rolling a rolling pin across the bag. Pour the crushed cookies into a bowl. Add butter; mix well. Press firmly onto the bottom of a 13 by 9-inch baking pan. (I didn’t have one this size and just used what cake dish I had, worked out fine!).
Beat the cream cheese, sugar and vanilla in a large bowl with a mixer until well blended. Add sour cream; mix well. Add the eggs, one at a time, beating just until blended blended after each.
Chop remaining cookies in a food processor. Stir 1 1/2 cups into the batter.
Pour the batter onto the crust and top with the remaining chopped cookies.
Bake for 45 minutes, or until the centre is almost set. Let it cool slowly by first turning the oven off. Wait 15 minutes, then slightly open the oven. Wait 15 minutes more and remove from the oven. Let it cool completely. Refrigerate for 4 hours. This process will help prevent cracking.
